Ingredients

Crumb Topping

  • 2/3 cup all-purpose flour

  • 1/2 cup firmly packed light brown sugar

  • 1/4 cup unsalted butter, melted

  • 1/2 cup unsalted butter, softened

  • 1 cup firmly packed light brown sugar

  • 2 eggs

  • 1/2 tsp salt

  • 1/4 tsp baking soda

  • 2 cups plain Greek yogurt

  • 1 1/2 cups peeled chopped apples


Method

  1. Preheat the oven to 350° and line a12 cup muffin tin with liners.

  2. For the crumb topping: stir together flour, brown sugar, melted butter, salt and cinnamon in a small bowl until crumbly.

  3. For the muffins: beat butter and brown sugar in a standard mixer at medium speed until fluffy. (about 3 minutes) Add eggs and vanilla and beat well.

  4. Whisk together flour, baking powder, cinnamon, salt, and baking soda in a medium bowl. Gradually add dry mixture to mixer alternately with Greek yogurt. Beating each time just until combined. Fold in apples.

  5. Scoop mixture into prepared muffin cups and top with crumb topping.

  6. Bake until golden brown (20-25 minutes)

  7. Cool for 5 minutes before removing from pan and completely cooling on wire racks.
