About The Event
Pumpkin spice is all the rage but what about all of the other tasty flavors that remind us of Fall? This class will feature autumnal flavors including maple, pecan, s'mores and of course, pumpkin. Chef Melissa Walnock, a classically trained pastry chef from the CIA Apple Pie Bakery Café, will walk students step-by-step through how to make 3 individual desserts listed below. Each student will go home with a box full of treats that they created in a class and a packet full of recipes.Â

Pumpkin Bread with cream cheese filling
S’mores Tart- graham cracker sable crust, whipped dark chocolate ganache filling, toasted meringue
Maple Pecan CheesecakeÂ
Melissa Walnock is A Certified Hospitality Educator of baking and pastry arts at The Culinary Institute of America (CIA). Chef Walnock serves as pastry chef and instructor in the college’s Apple Pie Bakery Café. Before joining the CIA faculty, Chef Walnock worked at some of the finest restaurants in the United States including The French Laundry in Yountville, CA, Jean-Georges V Steakhouse, Union Square Café in New York City and The Breakers in Palm Beach, FL.
